What is Katsuo Warayaki?

In Yaizu, Japan’s leading city for bonito catches, you can try your hand at making katsuo warayaki, a dish made by searing the surface of bonito fish over flames fueled by rice straw. This traditional cooking method enhances the natural flavor of the fish, sealing in its umami while adding a delightful smoky aroma and removing any fishiness.
