What Is Dashi?
Dashi is the flavorful broth that forms the foundation of Japanese cuisine, created by extracting umami and aroma from fish and sea-based ingredients. In Shizuoka, this tradition is closely tied to Suruga Bay—Japan’s deepest bay and one of the country’s richest fishing grounds. This experience features dashi made from locally sourced fish such as bonito, tuna, and mackerel, prepared using deep-sea water drawn from Suruga Bay. By tasting and comparing these dashi, you can experience how Shizuoka’s unique marine environment shapes the depth and character of Japanese cuisine.
