What is Shojin-Ryori (Buddhist Vegetarian Cuisine)?
Shojin-Ryori is a form of Buddhist vegetarian cuisine, primarily using plant-based ingredients like vegetables, fruits, beans, and grains. In Buddhism, killing is strictly prohibited, so Shojin Ryori excludes meat and fish.
Shojin-Ryori, originally developed as the diet of ascetic monks adhering to Buddhist precepts, is not exclusively for Buddhists.The dishes are lightly seasoned to highlight the natural flavors of the ingredients, promoting a healthy body through low salt and other beneficial effects.
